It’s an important time of year to acknowledge that more than 25% of Americans are on gluten free diets – that’s 3.1 million people.  People used to think gluten-free meant flavor-free? How to Bake Better with these Gluten-Free Tips from MIGHTYLICIOUS:

1. Use gluten-free flours: Avoid flours containing gluten such as wheat, barley, spelt, triticale and rye. Some good gluten-free options include blends, rice flour, almond, coconut, tapioca flour, and potato starch.

2. Use xanthan gum or guar gum: Gluten-free flours lack the elasticity and structure that gluten provides, so adding a binder like xanthan or guar gum can help to hold the ingredients together and give your baked goods a better texture.

3. Use a gluten-free baking mix: If you’re new to gluten-free baking, using a pre-made gluten-free baking mix can be a terrific way to get started.

4. Add extra liquid: Gluten-free flour tends to absorb more liquid than regular flour, so you may need to add more liquid to your recipes to compensate. This can help to keep your baked goods moist and prevent them from becoming dry and crumbly.

5. Use fresh ingredients: When baking gluten-free, use fresh ingredients. Fresh food retains minerals & vitamins, which contribute to strong gut-health.

6. Don’t overmix: Overmixing can cause gluten-free baked goods to become tough and dry. Mix your ingredients until just combined and avoid overworking the dough.

7. Adjust baking times and temperatures: Gluten-free baked goods may require different baking times and temperatures than their gluten-containing counterparts. Check your baked goods often by sight, NOT opening the oven, (which will drop the temperature and ruin your baking). Overcooking will make your baked goods dry & crumbly.

8. Stop the sticking. Gluten-free baked goods can stick to baking pans more easily than regular baked goods. Use non-stick baking spray or parchment paper help to prevent your baked goods from sticking.

9. Let baked goods cool: Gluten-free baked goods can be more delicate than regular baked goods, so it’s important to let them cool before removing them from the pan or slicing them. Ten minutes to cool is good.

10. Experiment and have fun: With a little trial and error you can make all your old family favorite recipes gluten-free.

More tips:

  1. Store gluten-free and gluten-containing foods in separate places.
  2. Keep cooking surfaces and food storage areas clean.
  3. Wash dishes and cooking equipment thoroughly.
  4. Consider keeping dedicated serving pieces, cutting boards, cookware, etc. for gluten-free food prep.
  5. Opt for restaurants with gluten-free menus; Use a gluten-free restaurant app.
